Head Chef – Taiwan Training Program

About the role

White Mist, the premium brunch and all‑day dining brand of Louisa Coffee, is launching its first outlet in Phnom Penh, Cambodia. The Head Chef will lead the kitchen, own the menu, and shape the culinary culture while participating in an immersive training program at the brand’s flagship location in Taiwan.

Key responsibilities

• Lead all culinary operations from prep to service and closing.
• Execute the full White Mist menu – brunch classics, all‑day dining items, specials and seasonal rotations – according to Taiwan HQ standards.
• Adapt core dishes to local tastes, ingredient availability and dietary preferences.
• Hire, train, mentor and manage the kitchen team (Sous Chef, Chef de Partie, Commis Chefs).
• Establish and enforce SOPs for food safety, hygiene, portion control, plating and waste management.
• Manage food cost, supplier relationships, inventory and kitchen budgets.
• Lead the Taiwan training program and cascade learnings to the team.
• Collaborate with the Taiwan culinary team on new menu development.

Required profile

• Culinary degree, diploma or equivalent professional kitchen training.
• 6+ years progressive culinary experience, including at least 2 years as Head Chef or Executive Chef.
• Strong background in Western cuisine, brunch or all‑day dining concepts.
• Proven ability to lead and develop a fast‑paced kitchen team.
• Excellent English communication; Khmer is a plus.
• Passport ready and able to travel to Taiwan for training.
