Baker & Pastry Chef – Taiwan Training Program

About the role

White Mist, a premium brunch concept by Louisa Coffee, is opening its first outlet in Phnom Penh and seeks a talented Baker & Pastry Chef. The successful candidate will lead the bakery and pastry program, producing daily breads, croissants, pastries, cakes and desserts that match White Mist’s high‑quality standards and complement the all‑day brunch menu.

Key responsibilities

• Prepare a daily assortment of breads, croissants, pastries, tarts, cakes and desserts following White Mist’s recipes and presentation guidelines.
• Execute core Taiwan recipes with precision while maintaining consistent texture, flavor and portion sizes.
• Produce baked components for the savory brunch menu, such as toasted breads, brioche buns, waffle and pancake batters.
• Plan and manage the full bake schedule to ensure timely service.
• Collaborate with the Head Chef and Taiwan headquarters to adapt the pastry menu for the Cambodian market, incorporating seasonal local ingredients.
• Develop original pastry items and limited‑edition specials that blend Western techniques with Cambodian flavors.
• Participate in menu tastings, provide feedback and uphold White Mist’s quality and hygiene standards.

Required profile

• Creative and skilled baker with experience in a high‑volume café or restaurant environment.
• Ability to follow detailed recipes and maintain consistent product quality.
• Strong collaboration skills to work with the Head Chef and international training team.
• Interest in incorporating local Cambodian ingredients into a Western pastry concept.
