Chef de Cuisine – Chinese Cuisine

About the role

The Chef de Cuisine is responsible for the culinary operations of the Chinese outlet, overseeing food production, menu development, purchasing specifications, and recipe management. The role leads, mentors and motivates kitchen staff while upholding the highest standards of food quality and sanitation.

Key responsibilities

• Ensure compliance with NagaWorld’s standards and relevant industry regulations.
• Supervise kitchen staff during shifts to maintain food preparation, organization, and presentation standards.
• Train staff according to planned programs and correct production errors as needed.
• Minimize waste and enforce portion control to achieve target food‑cost percentages.
• Develop and implement creative selling, merchandising, decoration, and presentation ideas.
• Ensure culinary products are visually attractive and prepared in an appetizing manner.
• Maintain strict adherence to authentic Chinese specialty cuisine for all menu items.
• Participate in preparing and maintaining recipe files.

Required profile

• Minimum high school education (or equivalent).
• At least 5 years of experience in Hong Kong cuisines, especially Cha Chaan Teng, preferably in a 4‑star or 5‑star hotel environment.
• Proficiency in Mandarin; English proficiency is a plus.
• Willingness to work extended hours, including evenings, weekends, and public holidays.
